Lemony Coconut Protein Truffles

These snacks are packed with plantbased protein, loaded with vitamin C and bioflavinoids for healthy skin, nails and hair and a stronger immune system.  The bee pollen adds extra Bee vitamins, crunch and is a natural anti-histamine!

Plus in the middle of an ice storm, these taste like a sunny tropical paradise!  

Ingredients for 15 truffles

1/2 cup Sunwarrior Vanilla protein powder http://rawelements.ca

3 tbsp fresh lemon juice

1 tbsp zest of 1 lemon

2 tbsp raw unpasteurized honey or 5 drops Lakanto liquid sweetener

3 tbsp coconut flour

1/3 cup + 2 tbsp melted coconut oil http://rawelements.ca

3/4 cup unsweetened shredded coconut

pinch sea salt

1 tbsp bee pollen

Directions

  1. Place dry ingredients in a mixer and turn on low.
  2. Add liquid ingredients and mix until combined.
  3. Shape into 15 bite-sized balls and roll in toasted, shredded coconut and bee pollen.
  4. They freeze for 1 month or keep in the fridge for 2 weeks.
