Earl Grey French Toast

Confession Time!  I never liked Earl Grey tea, in fact it was nauseating!

I started liking it when I was in Lisbon, Portugal this past summer. 

I was working for a British fashion photography crew and they were tea drinkers!!!!  So, I walked around the beautiful streets of Lisbon shopping for their English Breakfast tea and found a gourmet tea shop where I also bought some organic Earl Grey loose tea!

My LOVE for bergamot blossomed!

Now, I have 1-2 cups everyday instead of coffee and I sip it slowly so that I can enjoy the fragrant citrus notes of Bergamot.  The Bergamot orange is yellow or green in color and is similar to a lime.  It is a cross between a sour orange and lemon in taste.

I love Earl Grey so much now that I want to put it in everything and French toast is the perfect breakfast meal to have it in!

Earl Grey French Toast

Serves 2

Ingredients

4 slices Sprouted bread or gluten free bread

1 cup unsweetened coconut milk (Cha’s or https://earthschoice.ca are BEST!)

1 tbsp coconut cream

2 Earl Grey tea bags (I used https://stashtea.com they are organic and BCorp)

1 tablespoons arrowroot flour (any other flour will work also)

1.5 tablespoons ground chia or flaxseeds

1 tablespoon nutritional yeast

1 tsp cinnamon

Directions:

  1. Warm up the milk in a saucepan over a medium heat. Once it reaches a gentle simmer, turn off the heat and throw in the tea bags. Let this steep for at least 30 minutes or overnight.
  2. In small shallow dish, mix together the ground chia seeds and flour. Squeeze out the tea bags really well so all that flavor gets into the creamer then slowly whisk the creamer into the chia flour mix. Go slowly so that it doesn’t get all lumpy and gross. Let that sit for 5 minutes so that it can thicken up.
  3. After the 5 minutes are up, slowly add the nutritional yeast and stir.
  4. Warm your griddle over a medium heat and spread a little ghee or coconut oil on it so it doesn’t stick.
  5. Soak your bread slices into the batter for a couple seconds on each side and then place them right on the griddle. Cook for about 2 minutes each side, or until they look golden and tasty.
  6. Serve with some maple syrup or raw unpasteurized honey and fresh fruit.

Makes about 4 pieces of French toast but you can easily double or triple this recipe.
