Did you know that ketchup is NOT an actual serving of vegetables because most commercial ketchup is made with way too much sugar. My healthy version is full of fiber and lycopene, an antioxidant which helps with prostate, skin and bone health!
Makes 2 cups
1 cup dry packed organic sun-dried tomatoes soaked in 2 cups water for 30 minutes, drained and set water aside
5 chopped medjool dates soaked with sun-dried tomatoes
1 tbsp organic agave, maple syrup or raw, unpasteurized honey (optional)
1 cup reserved soaking water
2 tbsp apple cider vinegar
In a high powered blender, combined all ingredients and blend well until smooth. Adding or decreasing water, little by little, to get the consistency you like for your katzup. Will keep in fridge for up to 5 days.
