Ginger Lime Edamame Hummus

Makes 1.5 cups

Ingredients:

2 cups frozen edamame

2 garlic cloves

1” piece of ginger

Juice of 2 limes

2 tbsp tahini

¼ cup cilantro

½ tsp sea salt

1-2 tbsp olive oil

Directions:

Cover edamame in pots of water and boil for 4-5 min.  Discard water and put in food processor and add rest of ingredients blending well.  Serve with crackers or veggie sticks.
