Many people cant digest beans, so this hummus is a fantastic alternative without the bloating!
2 small organic zucchini peeled (about 2 cups)
½ cup tahini
2 tbsp olive oil
2-4 tbsp fresh lemon juice
3 cloves garlic, minced or grated
1 tsp cumin
1 tsp sea salt
2 tbsp minced parsley
Place all ingredients, except parsley and paprika in a food processor with metal “S” blade. Pulse and blend until smooth and creamy. Sprinkle parsley and paprika and serve with veggies, crackers or use to make sandwiches/wraps.
