Sprouted Adzuki Bean Salad

There is a little bit of work involved here to sprout the adzuki beans which does make them easier to digest or you can use 1 can of Eden Organics Adzuki beans!

How to Sprout adzuki beans:

Place 1/3 cup dried organic adzuki beans in glass jar and fill to top with filtered water.

Allow to soak for 8-10 hrs (don’t worry if it’s a bit longer as I’ve often forgotten about them for a whole day and they sprout just fine!).

Drain water and put fine plastic mesh over ring of jar so that beans do not fall out but water can still drain.

Flip jar upside down and rinse twice a day.  I usually rinse first thing in morning and before I go to bed.

Beans will sprout in 3-5 days usually.

Serves 6-8

Ingredients:

Sprouted adzuki beans above OR 1 can https://edenfoods.com Adzuki beans, rinsed and drained (I use this brand as they do not line their cans with harmful hormone altering BPA’s)

1 can any other type of beans like black beans, Romano, chick peas or pinto (from Eden Organics)

1 cup celery,  chopped finely

2 carrots, grated

1/3 cup red onion, finely chopped

3 tbsp hemp seeds

4 tbsp cup sunflower seeds

4 tbsp pumpkin seeds

10-12 sun-dried black olives

3 tbsp chopped parsley

1 tsp pink Himalayan salt

2 tsp cumin

4 tbsp cold-pressed olive oil

2 tbsp fresh lemon or lime juice

In a bowl, combine above ingredients, mix well and enjoy!
