Raspberry Mousse

PUMPKIN PIES ARE EVERYWHERE!

WHAT IF YOU DON’T LIKE PUMPKIN PIE, LIKE ME?

I prefer my pumpkin in savory dishes.  What about you?  

Good News!  I have been busy creating delicious desserts with fruit in season like raspberries because  I absolutely love pairing chocolate with fruit.  This raspberry mousse is light yet rich in protein & fiber.  Honestly, it’s just deliciously healthy!

Ingredients:

Serves 2

4 tbsp plain coconut yogurt (I used https://daiyafoods.com)

3 tbsp organic cacao powder

1 tbsp Sunwarrior Berry protein powder (20% saving on my About page in Recommended Products)

2 tbsp raspberry blossom unpasteurized honey (https://beekeepersnaturals.com

1/2 cup fresh raspberries (not frozen as they have too much water)

Directions:

  1. Place all the ingredients in a bowl EXCEPT the fresh raspberries.
  2. Whisk until smooth and creamy.

3.Pour into 2 serving cups/glasses and layer with fresh raspberries or you could also use raspberries as topping and enjoy!
