This quinoa bowl was inspired by BIO RAW, a Toronto based meal delivery service company that is all organic, eco-responsible, B-Corp and just all around delicious and awesome!
Their facility even runs on wind and solar power!
Their line of superfood protein bowls includes 7 different vegan, gluten-free and nut-free meals.
I created my own version of their “THE BUILD” with about 18g of protein and you can enjoy it raw or sauteed.
Ingredients:
Serves 1-2
2-3 large leaves kale, de-stemmed
1/2 cup cooked quinoa
1/2 cup beans (I love adzuki or mung because they are very alkalinizing)
1 medium zucchini, spiralized
1/2 yellow pepper, diced
1 medium carrot, peeled and grated
1 green onion
5-6 leaves fresh basil, sliced finely
3 tbsp each sunflower and pumpkin seeds
Dressing:
1/2 tbsp sesame seed oil
4 tbsp olive oil (if you are sauteing use coconut or avocado oil)
3 tbsp coconut aminos or tamari sauce
2-3 tbsp water
1 garlic minced
2″ piece ginger, grated
rind and juice of 1 fresh lemon
2 tbsp nutritional yeast
Directions:
- In a large wok or frying pan, saute garlic and ginger with oils for a few minutes. Add rest of dressing ingredients and all the vegetables (except the basil)Cannot get other user media. - If you are eating the bowl raw, whisk all ingredients in a small bowl and pour over bowl.
