Nut n Broccoli Pate

I know the title doesn’t sound appetizing but TRUST ME this pate is delicious not to mention, as always, NUTRITIOUS!

Enjoy it with some flax crackers, veggies, on sourdough bread or in your wraps….yum!

Makes 2 cups

Ingredients:

1/2 cup walnuts

1/2 cup Brazil nuts (If you don’t have any you can just use 1 cup walnuts)

1 cup sunflower seeds

1 cup chopped broccoli florets, lightly steamed (no stems here but use those for soup!)

1/4 cup mellow brown rice Miso

1 small onion, finely diced

juice from 1 lemon

1/2 tsp ground black pepper

3 tbsp finely chopped parsley

3-4 tbsp filtered water

Directions:

  1. Soak walnuts, Brazil nuts and sunflower seeds in a bowl covered with filtered water for about 1-2 hours.  Drain water and place nuts in a food processor.
  2. Add the rest of the ingredients to the food processor and mix well so that a firm paste forms that can hold its shape.  You might need a bit more or less water.
  3. Place pate in a mold of choice.  When ready to serve, flip the pate onto a serving plate and decorate with veggies or a few parsley leaves.  Enjoy this pate with veggie sticks, crackers, bread or in wraps!
