Cherry Chia Parfait

Chia Pudding

These parfaits are super delicious as a dessert or breakfast!  They are gluten-free and filled with plant-based vitamins and minerals.  Make them the night before and portion into 5 glass mason jars and you have just prepped a meal for your whole work week!


(Makes 5 portions)

2 cup unsweetened nut mylk of choice

2 tbsp maple syrup (optional)

2/3 cup whole chia seeds

2 tbsp ground flax

3 tbsp elderberry syrup (Recipe in my archives) or pure cherry or pomegranate juice

3/4 cup cherries

1.5 cups plain yogurt of choice (sometimes I use organic greek yogurt – full fat or goat yogurt or vegan coconut yogurt)

Superfood toppings (I used sunflower seeds, cacao nibs, shredded  coconut but you can also add hemp seeds, pumpkin seeds, bee pollen, nuts)


  1. Mix above ingredients in a small bowl and pour into 5 serving cups or glass mason jars.
  2. Let set for at least 1 hour. Top with 3-4 tablespoons of plain yogurt and a few of your favorite superfood toppings such as those mentioned above and sliced fresh fruit and berries.
  3. Will keep in fridge for 5 – 6 days.
