Asian Kale Salad

I have made this salad countless times and every time I invite family and friends or I bring it to a party, I get asked for the recipe!

The key here is to MASSAGE the dressing into the kale with your hands….seriously!

Serves 6-8

Ingredients:

5-6 large kale leaves, without the stem

½ large red pepper, thinly sliced

1 large carrot shredded

3 cups shredded red cabbage

2 green onions, sliced thinly

2 tbsp hemp hearts

3 tbsp each sunflower and pumpkin seeds

Place all ingredients in a large bowl and pour a few tablespoons of my delicious Citrus Dressing (It’s under dips, sauces and dressings).
